Cheese & black bean quesadilla

I like to keep things simple around here and at home. These are one of my regular lunches for myself and the kids. Pair them with some palta (avocado) or salsa and you’ll be happy.

Ingredients (for 4)

  • 4 whole wheat tortilla

  • 1/2 cup cheese, grated

  • 2 cloves garlic, minced

  • 1/2 cup black beans (cooked or can opened, rinsed, and drained)

  • (opt) 1/2 fresh or frozen corn

Instructions

  1. prepare all your ingredients

  2. heat a flat, wide pan — at least as wide as your tortillas — on medium

  3. set one tortilla on the the pan and spread about 1/8 cup of cheese on one half of the tortile

  4. sprinkle the cheese with 1 to 2 tbsp black beans and a pinch of garlic

  5. fold the tortilla over

  6. place another tortilla on the now-open side of the pan so half of it lays over the first tortilla and the second half is on the pan

  7. sprinkle with cheese, black beans & garlic like before

  8. fold over

  9. cook until the bottom side is lightly golden and the cheese has melted

  10. flip the other side and cook until lightly golden

  11. remove and cook the other two quesadillas!

  12. enjoy with avocado, sour cream, salsa or (bear with me) plain greek yogurt
