Bright, fresh avocado salad
Sometimes simple is the best, and that’s certainly true of this easy, nutritious dish. If you want it as a meal, I’d add some hemp seeds, sunflower seeds, and a bit of feta to get some protein in there.
Ingredients — for two
1/2 long English cucumber, diced
1 yellow (or any colour) bell pepper, diced
1 avocado, diced
1 tbsp olive oil
juice of 1 lemon
salt & pepper to taste
