Crunchy Chickpea Nibbles
Feeling snacky? These plant-based snacks are loaded with protein and fibre. They cook up nicely and you can make a pretty good sized batch at one time to keep yourself set for days.
Ingredients
1 can or 1.5 cups of cooked chickpeas (see note)
1 tbsp olive oil
1 tsp garlic powder
1 tsp dill powder
pinch salt
pinch black pepper
Instructions
preheat oven to 375°F
drain and rinse canned chickpeas
towel or air dry
add to bowl and add seasonings
spread chickpeas into a single layer on a baking sheet covered in parchment paper
bake for 30 minutes, turning every ten minutes
cool and serve
Note
I always use dried chickpeas. If you are using them, soak and cook them as usual. Then cool them and dehull. Dry the chickpeas and pick up at step #4.
You can use any seasonings you like. Zatar works well.
