Mediterranean Quinoa Salad
This salad is full of all our family favourites. It’s perfect to make a big batch and keep in the fridge for quick lunches.
Ingredients
- 2 cups cooked quinoa 
- 1/2 avocado chopped (grilled avocado is delicious) 
- 1/4 can sliced black olives, or olives of choice 
- 1/2 red pepper, diced 
- tbsp olive oil 
- 1/2 lime 
- 1/2 tsp salt (or to taste) 
- 3 - 4 mint leaves, shredded 
Instructions
- Mix together! 
Notes
Some great additions are:
- hemp hearts 
- 1/2 can beans 
- sunflower seeds 
- tomatoes 
- feta 
- goat cheese
