One egg omelette with red peppers

Sometimes all you need is something quick, just for yourself and it’s so hard to find recipes that aren’t for 4-plus people. Try this quick, omelette for any time you need a quick-something.

Ingredients

  • 1 egg

  • 1 tbsp diced red pepper

  • 1/2 clove of garlic, minced

  • 1 tbsp butter or olive oil

  • 1 oz grated or thinly sliced cheese (any cheese that melts)

  • salt & pepper

  • (opt) 1 tsp minced herbs

Instructions

  1. heat oil/butter in non-stick pan on medium-high heat

  2. add peppers and garlic to the oil and let cook while you prep the egg

  3. crack the egg into a bowl and add salt & pepper to taste

  4. whisk

  5. pour egg mixture over top of red peppers & garlic

  6. let egg cook for about 30 seconds

  7. spread cheese onto one half of the egg

  8. let cook for another 30 seconds

  9. flip the side of the omelette that doesn’t have cheese onto the side that does have cheese, folding it in half

  10. cook for another 30 seconds

  11. flip and cook on the other side for another 30 seconds. Both sides should be golden and the eggs should be set

  12. enjoy!
