Toasted rice

If you are tired of plain rice and want to add some depth to it, try toasting it first. This gives it a warm, nutty flavour. After it toasts, you can add your liquid and additional vegetables and meat and cook it together. It’s a great way to use up leftovers. In the picture above, I used jasmine rice, bone broth, frozen vegetables (broccoli, cauliflower, carrots) and when it was done I grated some cheese on top.

Ingredients (for two)

  • 1 cup long, grain white rice

  • 2 cups water or broth

  • 1/2 tsp salt

  • (opt) pepper — to taste

  • (opt) 2 cups vegetables — frozen, fresh, or leftovers

  • (opt) 1 cup cut up, leftover meat

  • (opt) 1/2 cup grated cheese

Instructions

  1. heat a pan on medium heat

  2. pour dry rice into pan and cook for 7 to 10 minutes , stirring frequently until the rice has many golden pieces

  3. add broth/water and salt

  4. bring to a boil

  5. add any additions and cover

  6. simmer for 15 to 20 minutes until rice is cooked

  7. (opt) sprinkle with grated cheese while hot

  8. enjoy!
