Fried egg in red pepper ring

Ingredients — for one

  • 1 egg

  • slice of red (or other coloured pepper), cut into an unbroken, even ring

  • 1 tbsp oil

  • salt & pepper (to taste)

  • (opt) garlic or herbs (dill, etc.)

Instructions

  1. heat oil in pan

  2. place red pepper ring in pan and let cook on one side. Flip

  3. (opt) if frying garlic, add minced garlic to the centre of the pan

  4. crack egg into red pepper ring

  5. fry until sunnyside up or
    fry and carefully flip the egg and pepper halfway through for an overeasy egg

  6. serve on it’s own or on toast

Notes

If your red pepper ring is uneven, the egg will creep out the bottom when it is first added. Cut your pepper as evenly as possible. You can also try and press the ring down with a spatula right after the egg is added, to increase contact with pan and prevent the egg from spreading.
