White bean & pesto salad

I love, love, love pesto. It’s one of my favourite flavour profiles/condiments. If you love it as much as I do and want a quick, healthy meal. This is a must.

Ingredients

  • 1 can of white cannellini beans (or 1.5 cups cooked from dry)
    rinse and drain beans

  • 1/2 cup cherry or grape tomatoes, halved

  • 1 cup of fresh greens (arugula, endives, kale, red leaf lettuce, or a mix)

  • 1/3 cup of walnuts (or pistachios)

  • 2 tbsp pesto (homemade or store bought)

  • juice of 1/2 a lemon

  • 1 tbsp olive oil

  • salt & pepper to taste

  • (opt) fresh herbs

Instructions

  1. combine all ingredients and serve!
